Ingredients
2 Tbsp coconut oil
3 Tbsp curry powder
½ lemon, juiced
2 cups frozen broccoli florets
1 cup frozen green peppers
1 cup frozen snow peas
1 cup frozen mushrooms
2 pounds frozen peeled shrimp
1 tsp ground cinnamon
Pink salt and pepper
The Method
In a skillet, warm the coconut oil over medium heat
Add the frozen vegetables and sauté until warm (don’t let them get too soft/tender)
Add the shrimp and cook until they are pink
Squeeze the lemon over the skillet
Sprinkle with curry, cinnamon, pink salt and pepper
Serve warm with cauliflower rice
